Cultural Technics
Respectful of the terroir and the environment, we apply traditional cultivation methods within the framework of reasoned pest management and sustainable viticulture:
- Controlled grass cover;
- Erosion control;
- Limitation of phytosanitary treatments;
- No insecticide treatment;
- No treatment for rot;
- Pruning in a single arcure or a cord for the control of the yields.
Since 2019, the entire Domaine Gilles Noblet has been certified as a high environmental value operation (HVE3). It is the highest level of the environmental system certifying a high level of biodiversity and a very low use of inputs.
Vinification
The harvest is generally done during the first half of September. We harvest the plots mechanically or manually depending on the age of the vines and the topography of the vineyard.
The bunches are transported in stainless steel tanks followed by pneumatic pressing. The juices are settled for 24 hours at low temperature.
The clear juices obtained will be put in vats for the Macon-Fuissé. The Pouilly-Loché and Pouilly-Fuissé are placed in casks and oak barrels in order to unleash their full potential.
The alcoholic and malolactic fermentations are made with total control of temperatures between 16 ° and 18 ° C. the aging on fine lees will take place over 8 months for the Macon-Fuissé, while the Pouilly-Loché and Pouilly-Fuissé will be students 12 months in oak barrels and barrels.
Bottling takes place between April and November.
